A co-worker of mine mentioned today that she tested the theory of freezing tomatoes to see if the skins would come right off and they did! I told her, "Of course they did. The Damsel taught me that. The Damsel is good. The Damsel is wise."

Isn’t it a great idea? Then you can mess with the tomatoes LATER, when it’s cooler outside, etc.

I found your blog from Tasty Kitchen. Thanks so much for this tip about just freezing tomatoes. I will go home and do that now. I was going to water bath process some of them yesterday but just couldn’t get up the energy to do it.
