The Damsel feels ridiculous that she didn’t know there was a difference between honing and sharpening. She assumed “hone” was merely a fancy way to say “sharpen.”

How embarrassing.

As a matter of fact, she most commonly heard the word “hone” in the phrase “hone your skills” rather than in a knife context.

Apparently, honing is what you do to maintain a knife’s sharpness. If you don’t do it often, you’ll need to resort to the much more drastic sharpening.

The following video shows the process quite nicely, and now the Damsel actually understands what that long cylinder steel thing is for. Humm.

    I just honed earlier this week…although I thought I was sharpening it! Once a day really?

    so my fancy "never needs sharpening" knives might actually need honing?

    yep, never knew the difference either –

    of course, I'm pretty sure that after slicing up my thumb yesterday on some of those fancy knives that ManOfTheHouse will just take care of whatever honing or sharpening that needs to be done. He is tired of bandaging his klutzy wife.

      I think that is what they are saying. But I guess if you have one of the 3 brands of super hard knives, you need a special honing rod.

    Doesn't the need for honing and sharpening depend ono the quality of the blade. I have a fiskar from Denmark (I knew you'd like that little tidbit) that is probably 30 years old that stays sharp for a long time. Maybe it stays sharp because I only use it on Sundays and holidays.

    Great instructional video. I always feel that no matter how good your equipment is you wont get great results without proper teaching. This post goes a long way. Thanks for sharing.
